Last Friday I made a batch of blueberry muffins using the recipe book that came with my vintage early 50s Sunbeam mixer. The grocery store had blueberries on sale for a buck a carton so we bought loads! And what better to make with blueberries then muffins?
Like everything I have made from this recipe book they turned out awesome. The changes I made to this were- I used 1 cup of gluten free flour/1 cup regular flour, fat free milk instead of whole, I used 2 egg whites instead of a whole egg and I used 1/2 part coconut oil and 1/2 part mashed banana for shortning to make it all lower fat. I made a dozen and there are only 4 left! I like that this recipe only called for a quarter cup of sugar. I can't stand overly sweet baked goods. These were just perfect. <3
