Banana Bread Cookies

It's been a while since my last entry. I'm still here, I have just been to lazy to post! What have I been up to? The usual- cooking, cleaning, obsessing over vintage clothes and a little bit of sewing. One thing I wanted to share with you is a banana cookie recipe I came up with. I call them Banana Bread cookies since they have a more fluffy bread like taste and texture. The perfect thing to make when you have a few bananas you need to use up that are about to go bad. These are on the low fat side and less sweet then your usual cookie. They are great for breakfast!




Low Fat Banana Bread Cookies


1 1/2 cup flour (I used Bobs Gluten free flour but you can use all purpose)
1/2 tsp Xanthan Gum (Only if you are making them gluten free. Otherwise omit this)
1 cup of mashed over ripe banana
1/3 cup margarine
1/2 cup sugar
2 eggs
1 tsp vanilla extract
2 tsp baking powder
1/2 tsp baking soda
1 1/2 cups cooking oats/oatmeal
1/2 cup fine chopped pecans or walnuts
1/3 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp clove

Pre heat oven to 375 F. Mix mashed banana, margarine, sugar, vanilla and eggs together on medium speed until well blended. Add in spices, salt, baking soda baking powder and Xanthan gum. Slowly add in the flour half a cup at a time. Slowly add in oats. If you are making these gluten free you may need to use less oats since GF batter tends to be on the dry side. Remove bowl from mixer and hand mix in the chopped nuts. I usually scoop a tablespoon or so per cookie but this is up to you depending on how big your like your cookies. Bake on greased cooking sheet for 12-15 minutes.

These sound so yummy, and at the moment I am a bit overrun with bananas, so...perfect timing! I'm going to try and make them vegan by subbing out the eggs for egg replacer. I'll let you know how it goes!

I just thought you might like to know that I made the cookies! Vegan-style, that is...they came out super yummy. I added some mini chocolate chips to half the batch, and those are pretty dang good, too! Thanks for the recipe...it's nice to have something else to make with the excess bananas :-)
